Going Soy and Dairy Free

For lent this year, in addition to my typical no fried food give up, I decided to do something very good for my diet and give up soy and dairy as well.

My mom said that she’s pretty sure I’ve always been lactose intolerant, I was diagnosed, then un-diagnosed in the fifth grade. However, my body has never really tolerated it that well, and it’s been something I needed to quit for a long time, so God was really the best excuse to finally do it.  In addition to being lactose intolerant, I found out the very hard way that I was soy intolerant, almost worse than my lactose problem. So I decided to give up both.

This has been a lot harder than I thought and I think I’m only about two weeks in, so I thought I would give you some tips.

What to Eat

  • Enjoy Life products are dairy, soy, peanut, and gluten free, along with a host of other allergens. You can also see what places sell what items on their website.
  • Annie’s brand products. Be careful depending on how allergic you are because something in the factory use dairy so just be advised. I’ve found snacks at Target and Giant Eagle.
  • Almonds. For some reason I have had the most luck with almonds. Almond milk, almond the snack food, and they come in different flavors.
  • Subway. While  you have to skip the cheese and flat bread, with a simple Google search you can find a complete list of allergens in each item you might want in your sub.

Cooking Tips

  • The more basic the better.
  • Buy veggies, go with simple things like chicken
  • Make sure everything you’re cooking with doesn’t have soy or dairy, including any oils and cooking sprays.

12 Days of Christmas: Day 8- Salted Caramel Mocha Brownies

So basically as soon as I got to Ireland I found this recipe for Salted Caramel Mocha Brownies on Tumblr, but I didn’t have an oven so I had to wait three months to make them, so that’s what I did yesterday.

This is what you need to make the caramel. We had caramel sauce, which would have been the easy way out, I wanted to see if I could make it myself.

The final product. It did turn out a little runny, it should have been thicker but I let it be. I didn’t want to mess with it too much.

After you make the caramel you make the rest of the brownies. This is what you need.

Then you have to melt the butter and chocolate together.

Then you just mix everything together.

This is where it gets a little different. You put half the batter in the bottom, then take the Nutella and spoon it out in sections, then put most of the caramel over it.

So it doesn’t look that appetizing, especially since I didn’t drizzle the rest of the caramel over the top. Since it didn’t work out right, I decided that it would be too sweet and too runny to put more on top and I had store-bought caramel as well, I just was not in the mood to put more on top. All in all they were absolutely delicious. They are cakey but gooey at the same time and if you ask me that’s the best kind of brownie.

12 Days of Christmas: Day 1

Oreo Truffles: Christmas Movie Snack

Day 1 of the 12 Days of Christmas on my blog! This is the first day of 12 days of daily blogging leading up to and including Christmas. I find it quite fitting that on the first day I’ll be doing my first “cooking” post!

A few weeks ago Jenna (my photographer for a several of these photos) made Oreo Truffles. Now, we used an American recipe, so there was a lot of improvising involved, and also why some of the truffles ended up without chocolate coating.

These are the ingredients, in America you need a full package Oreos (the full ingredients and recipe are linked above).

We did not have anything but a bottle of BBQ sauce to smash the cookies with, it made for an interesting experience.

While we mixed everything on the stove, it was NOT on, this was just due to limited counter space in my apartment.

Let me know if you make these! They’re great with Christmas movies, but they are very rich, I recommend something salty to balance them out. They would also make a great addition to a cookie tray!

Food and Boys: Two of my Favorite Things.

Let’s start with food. College food. I know everyone complains about dining hall food, so for me being a super picky eater I was really nervous about the food here but after being for almost two weeks, it’s really not bad. And if it is bad you don’t eat it and it helps you avoid the freshman fifteen. Now some tips for those of you who don’t like the dining hall food. I know my school, as well as many others that I visited had “flex” dollars or money that would be on a card that could be used at a coffee shop, sandwich place, or whatever else they have on campus, so say you look at what’s for lunch and you don’t like the sound of it you have a fall back plan. I have yet to use mine, but I  think one day this week I’m gonna try it rather than eating more chicken in the dining hall. Another tip is snacks in the dorm room. At my school we can’t have toaster, but if you like poptarts, they are just as good in the microwave. Oreos dipped in peanut butter has to be one of the most delicious things ever. Protein bars are awesome, especially if you’re running late or you’re feeling too lazy to go to the dining hall for breakfast. My last tip is actually about the dining hall is to stay away from anything that sounds too good to be true, because it probably is, sometimes they try to get too fancy, and it’s better just to keep it simple and if it’s too extravagant it’s probably not going to be very good.

Anyway onto the next topic of boys. First here’s an apology to all of my guy followers because you might not be very interested in this section, but then again maybe a girls perspective will benefit your game. Who know? Not me, that’s for sure. So before I start this here’s a little background knowledge about me and my experience with boys, and it’s not a lot at all. Freshman year of high school I had my first boyfriend and that lasted for a little over a year, and then I didn’t know what to do outside of a relationship, so I rebounded. My rebound guy was a total ass and he kissed me in public and I hated it. He really like a lot of tongue and that was just disgusting so I broke up with him. After that I was lead on by my best friend (yes he was a boy) for a good year and a half, like the rest of sophomore year, all of junior year, and the beginning of senior year and we went from being inseparable to not even talking, he broke my heart in more ways than one. Then my last brush of romance was awful, this guy basically just repeatedly screwed me over for my senior year and one of the worst parts was I stopped talking to a really great guy just because I thought I was in a monogamous relationship, but really to him I was just another girl to play. So that is my very little past with boys, any questions or advice on high school relationships and continuing them? Post in the comments please:)

Now continuing onto why I’m putting this in my awkward adventures as well as college advice and shit. Anyway, my advice girls is don’t hook up with anyone during the first week as a freshman, it doesn’t matter if you are a slut or not, you will get that reputation and you do not want that following you around the next four years. Next piece, if you are having a guy over, tell your roommate, that is not something they need walk in on! Finally, at least this is what I’m trying to do is just have fun and meet different guys. To be honest I’m a prude and I’m not going to have sex until I’m married so when I have fun I mean like cuddle and watch movies and play board games with. So I just want guys friends, and if a friendship could blossom into something more like a romance I’d be fine adding some kissing or making out into the mix of that but for now I just want fun and not serious.
